Crustless Paleo Quiche Bites

In the morning we are all in a rush, this is a great recipe you can make ahead of time to keep you fuelled up and ready to tackled the day. It even works great as a quick snack in between meals.



12 eggs

1lb sausage or bacon ( I prefer bacon crumble, easier to prepare)

1/2 green pepper chopped

1/2 rep pepper chopped

1-2 Green onion chopped

1 tbsp Salt & pepper

1 tsp Cayenne pepper

Handful fresh basil chopped fine

Handful fresh parsley chopped fine



Cook the sausage or bacon while prepping the rest of the ingredients.

Grease 2 muffin tins with coconut oil.

Preheat oven to 350.

In a medium size mixing bowl mix whisk your 12 eggs. Then add in the rest of the ingredients and mix well.

Bake for approx 20-25 minutes until golden brown on top.

There ya go simple, quick, easy and very delicious.
