Hey everyone, Steve here from Results Kickboxing. I just wanted to share one of my favorite weekend recipes with you. This is a great tasting healthy alternative to traditional breaded chicken fingers. This is the best way to cap off a hard week of kickboxing and weight training when you are just craving something savory and delicious! It is easy to make and goes great with a salad or some steamed veggies.
1 cup coconut flour
1 tbsp paprika
1 tbsp cayenne pepper
1 tbsp garlic powder
1 tbsp sea salt
1 tbsp pepper
1 tsp ginger
1 tsp chili powder
2 lbs chicken breast
Cut the chicken into strips just bigger than finger size.
Crack your eggs into a bowl and whisk for your egg wash.
Mix all dry ingredients together and spread out on a plate for your coating.
Preheat your pan on high with a liberal amount of avocado oil.
Take your chicken first dip in the egg wash, roll in your coating mix and then fry in your pan for a few minutes on each side.
Serve with hot sauce or melted grass fed butter as a dip and your all set!
